Palesa first joined The Nest on 19 June 2018 as a kitchen helper—her very first experience working in a hotel setting. At just 25 years old, she stepped into a new world with curiosity, determination, and a warm smile. For over two years, she worked hard behind the scenes, learning the ropes, mastering the basics, and finding her footing in the fast-paced world of hospitality.
Then, on 26 November 2020, Palesa made a bold decision: to take a step back so she could leap forward. She embarked on a two-year learnership program to study as an assistant chef, investing in her growth and expanding her culinary skills. With this new qualification and a heart full of ambition, she returned to The Nest—ready to express herself and bring fresh ideas to the kitchen.
Palesa’s growth since returning has been nothing short of inspiring. “When I came back, I knew a bit of everything from the kitchen—except pastry,” she shares. “But they allowed me to express and try.” That spirit of encouragement is what defines life at The Nest. We believe in giving our people the freedom to grow, to explore, and to shine.
Today, at 32 years old, Palesa is thriving in a role where her creativity and confidence bloom daily.
Our Second Head Chef, who joined The Nest in December 2024, had this to say about Palesa’s transformation:
“To see how Palesa has grown in her role within 4 months is remarkable. Her confidence is blooming, she’s not scared to think outside the box, she loves to learn and is quick at it. She has the ability to make something out of nothing, which is a quality that is cherished in this industry. Even her culinary skills are up there with her patisserie talent. I hope that she continues to thrive and never stops making magic.”
